What's Cookin' - Eva's Greek Potato Salad


Potato salad is such an American staple. We serve it up all Summer long with burgers and hot dogs and grilled chicken. And it's good. But every now and again, don't you want something that stretches the boundaries of traditional potato salad, that makes your kitchen smell like heaven on earth and causes your family and guests to sigh with pleasure?

Eva's Greek Potato Salad is just that recipe ...


The lemon dressing is so fragrant and delicious - mmmmm, garlic and lemon and fresh oregano - and then you throw in some thinly sliced red onion to soak up the flavors ...


There are some fabulous ingredients in this dish in addition to potatoes -- seedless cucumbers, sun-dried tomtatoes, Feta cheese and olives. Our Fry's grocery store actually has an olive bar in the deli. The dry cure Greek olives are wonderfully pungent and salty. I pitted them and cut them in half because I really dislike having to spit a pit out while I'm eating and then it sits there on the plate ...

This salad looks yummy. I'd pluck out the onions since my silly self doesn't like em but it sure looks delicious.
